Apple/Jicama/Cabbage Slaw
1 Apple cut the size of match sticks
Half jicama cut into “match sticks.” (I purchase the large jicamas as they have a
better flavor than small ones. I use the left over for a hummus tray.)
2 cups of shredded cabbage
Dressing:
Equal parts: Mayonnaise, apple cider vinegar, sugar
(Olive oil can be substitutes in part for mayonnaise and sugar substituted can be
substituted for sugar.)
Put dressing in a jar with tight lid and shake until dressing is a smooth
consistency.
